As a mother of three who works in the natural health industry, I am always looking for creative ideas for healthy snacks and treats for the kids. What kid doesn’t enjoy rice krispie squares? I remember making them with my mom when I was growing up, insisting that I wanted to help only to give up after only a few seconds because it was so sticky and almost impossible to stir! As a parent, knowing what these squares are made of makes me cringe yet now that Kellogg’s has come out with individually wrapped squares I bet they are packed in many children’s lunch boxes.
I recently came across a recipe from Julie Daniluk RHN, host of the Healthy Gourmet for Balanced Planets Super Squares. Along the same lines as rice krispie squares only packed with nutrition, these squares are simply delightful. What’s even better – kids love them!!!
Julie’s Super Squares
- 3/4 cup (185 mL) rice syrup
- 1/2 cup (125 mL) hazelnut or almond butter
- 1/2 cup (125 mL) tahini
- 1/8 tsp (.5 mL) grey sea salt or pink rock salt
- ½ cup (120 mL) SuperFoods™ Daily Power Shake Powder – Vanilla or Chocolate flavour depending on your taste.
- 5 cups (1.25 L) crispy brown rice cereal
- 2 tbsp ground flax seed
- 1 tsp (5 mL) cinnamon
- 1/4 cup (60 ml) goji berries (optional)
Calories: 120 calories • Fat: 7 grams • Protein: 8 grams • Carbs: 12 grams
Directions: In a saucepan over low heat, combine brown rice syrup, tahini and hazelnut or almond butter until softened. Remove from heat. Add sea salt, flax and SuperFoods™ Daily Power Shake Powder. Stir well. Fold in cereal, hazelnuts and cinnamon, stirring until well mixed. Press into a 9 x 13 inch (18 x 32 cm) pan. Sprinkle goji berries on and pat lightly. Slice into 24 squares and place in an airtight container
